I have now tried this approach with Zoom, I have used it with Webex and it works. Citrix workspace app mac 10.12. I used it just today.
Mac Run Ipad Apps
Plug your iPad into your Mac then open QuickTime Player. Select File > New Movie Recording than select the v next to the record button. From the drop list select your iPad, it should show up as an option. Now you can record away. I have included a screenshot so you can see the option.
